Effective planning is crucial for ensuring guest satisfaction and operational efficiency in the hospitality industry. One of the key tools for achieving this is the kitchen report, which provides insights into guest arrangements for meals such as breakfast, lunch, and dinner. A kitchen report is a document that outlines the expected number of guests for each meal service over a given period.

How to generate a Kitchen Forecast Summary list

All hotel reports are available under the 'Reports' tab in the 'Hotel Management' module. These reports are divided into a few sections - kitchen reports, front office, finance, etc. To generate a kitchen forecast summary - follow these steps:

  1. Open the 'Hotel Management'
  2. Click the 'Reports'
  3. Click the 'Kitchen Forecast Summary' in the 'Kitchen' section.

In the new wizard, set the date range for which the report has to be generated. The system automatically assigns today's date as the Start Date and sets the End Date to two weeks from now.

The standard date range is set to two weeks.

Kitchen Forecast Summary structure

The report starts with a date marking its generation, followed by details about the person who created it and the time it was done.

In this report, all individual reservations are displayed in one line for each date, and group reservations are displayed in a separate line for each group for each date.

  1. Date - a date within a defined date range
  2. Guest - 'Individual' for individual reservations and 'Group: Group Name' for group reservations;
  3. A/C/I - total number of guests of each age category;
  4. B/L/D (Breakfast/Lunch/Dinner) - due to arrangement type, the system counts it in a certain column and shows the total value;
  5. Arrangements - names of all arrangements appear here.
